Mousse et Fils Champagne L'Or d'Eugene 'Perpetuelle Blanc de Noir' NV
A perpetual reserve is different than a solera. To make it simple, imagine 2 barrels, 1 full and 1 empty. You transfer half of the full one in the empty, so both are at 50%. Then, you add 50% of the new vintage in each one. You bottle one of the tanks and keep the other one to start again the next year. Cedric uses this method to strike a masterful balance between the freshness of the new vintage with the complexity and depth only “old wines†can bring. The blend s is 80% pinot meunier and 20% pinot noir, and is finished with a dosage of five grams/liter.
Lovely and refined aromas of golden orchard fruit, honeycomb, mirabelle plum, candied citrus peel and fresh pastry. On the palate, it is elegant, full-bodied, and focused, with a fine mousse and excellent minerality. Medium to full-bodied, satiny and layered, with a rich and sapid core of fruit, lively acidity and a lengthy finish.
