Winemaker Stephen Dooley painstakingly caresses this precocious young Pinot Noir culled from various high quality vineyards from San Luis Obispo. His penchant for using a small portion of new oak (30%) and the remainder in older barrels assures that while the wine has good weight, it will not be dominated by wood. Light tannins, solid black cherry flavors and very good length allow this to be a great match with poultry, fish and pork, especially grilled.
