Balma Brut Nature Reserva Cava NV
This is a truly stunning sparkling wine produced at the Mas Bertran Estate which is owned and operated by the Ventura family since 2005, and currently run by third generation siblings, Eva and Santi, along with the cousin, Roser. Available nearly exclusively by the glass at the José Andrés restaurants, this Gran Reserva bubbling beauty is made from the three native white grapes of the region: Xarel-lo, Macabeo, and Parellada. With no added sugars and an additional 24 months of aging on the lees, this sparkling wine drinks more like Champagne than the Cava’s of yesteryear. This is not Cava, after all, it is Classic Penedes.
