Jean Foillard Fleurie 2021
Jean Foillard is one of the pioneers in the production of natural wines. It works with a non-interventionist mentality, in order to respect the grape as much as possible and ensure that it expresses its full potential.
The grapes for Foillard Fleurie come from three old vineyards located on slopes with granitic sandy soils. All together there are no more than 2 hectares. The harvest is carried out manually to preserve the integrity of the grape and to ensure that an initial selection of bunches can be made in the field.
Once in the winery the Foillard Fleurie harvest is vatted whole and without destemming in order to ferment in the traditional Burgundy way, undergoing what is called carbonic maceration. The vintage ferments with native yeasts at a low temperature for about 3 or 4 weeks. Lastly, the wine is aged for 6 to 9 months in French oak barrels. Jean Foillard does not use sulphur throughout the whole winemaking process.
Foillard Fleurie is a pleasant wine to drink, with a medium body, and aromatic touches of flowers and red berries. On the palate it has herbaceous notes and a great minerality.
