Agricola Grillos Cantores El Cachito 2021
The Itata Valley in Chile is home to some of the world's oldest vines and is known for its historic wine production. Paco Leyton uses fruit from vineyards with soils that are loaded with minerality - white silt, sand, granite, with high concentrations of quartz. The vines are non-irrigated, plowed by hand, and naturally farmed. A blend of 60% Cinsault and 40% Pais, this wine is light to medium-bodied with warm spices and layers of cherry, red berries, smoke, and savory notes. Lovely acidity paired with soft but structured tannins make this wine the perfect pair with anything from grilled vegetables to steak chimichurri. You read that correctly - despite being light on its feet, it's full of flavor and structure to pair with pretty much anything. That bright wash of acidity preserves the lift and puts this in the category of a great "chillable" Fall red!
